Tatsoi is also known as “spinach mustard”. It is abroad-leafed green vegetable, varying in color from pale green to very darkgreen. When eaten, tatsoi has a somewhat creamy texture and noticeably distinctflavor. Because of the spoon-shape of its leaves, tatsoi is also known as“spoon mustard”
The plant has dark green spoon-shaped leaves which form athick rosette. It has a soft creamy texture and has a subtle yet distinctive flavor.
It can be grown to harvestable size in 45–50 days, and canwithstand temperatures down to –10 °C (15 °F). Tatsoi can even be harvestedfrom under snow
Tatsoi can be eaten raw or cooked and makes a greatsubstitute for spinach, lettuce, or any greens for a salad. When cookingtatsoi, its best to steam or stir-fry with other vegetables or main dish.
