From Mexico comes, Pasilla Bajio, also known as the Chile Negro or Mexican Negro. Pasilla means Little Raisin in Spanish and refers to the way the dark green chilli fruit turns deep brown and slightly wrinkled, when it's fully mature and dried.
Pasilla Bajio produces amazing looking pods. The pods are around 25 cm long, 2-3 cm wide, start off dark green and ends up dark brown when they are fully ripe.
Used in the famous Mexican Mole sauce, dried and powered, enchiladas, salsa. Flavour wise: Sweet, slight smokey & fruity a bit like a raisin.
