Description

Artichoke, a gourmet vegetable is a perennial thistle which originates from the Western Mediterranean in ancient times. ARTICHOKE Purple Headed produce deep purple flower heads from late autumn to spring. The flower bud has been eaten as a vegetable since ancient times. It grows to 1.5m tall and 1m across, within 5 years. Cut buds when heads are tight, boil until tender.

Sow after last frosts in temperate climates in a well-draining, well limed soil.

They prefer an open, sunny spot. Artichokes need a chilling period to produce buds.
