About Amaranth: All Amaranths are annuals or short lived perennials with oval, pointed leaves of various colours, which are followed by minute flowers borne on (sometimes drooping), tassel-like spikes that last until the end of summer.
You can also use the cut-and-come-again method on the main plant. Using a sharp gardening knife, cut the stalk 10 inches (20 cm) above the ground and use it as needed. Your red amaranth will grow back and will be ready to be harvested again in another month.
Amaranth leaves are an excellent source of carotene, iron, calcium, protein, vitamin C and trace elements. Local farmer's markets may offer bunches of amaranth greens, but those don't keep at all so you'd have to use them quickly.
