Boletus Edulis mushrooms are popularly known as the king of mushrooms .
The fungus grows in deciduous and coniferous forests and tree plantations, forming symbiotic ectomycorrhizal associations with living trees by enveloping the tree's underground roots with sheaths of fungal tissue.
Dried porcini mushrooms are characterized by a strong aroma, in addition to sauces, soups or meats gives the dishes a rich flavour.
Prized as an ingredient in various culinary dishes, B. edulis is an edible mushroom held in high regard in many cuisines, and is commonly prepared and eaten in soups, pasta, or risotto. The mushroom is low in fat and digestible carbohydrates, and high in protein, vitamins, minerals and dietary fibre. Although it is sold commercially, it is very difficult to cultivate. Available fresh in autumn throughout Europe and Russia, it is most often dried, packaged and distributed worldwide. It keeps its flavour after drying, and it is then reconstituted and used in cooking. B. edulis is one of the few fungi sold pickled.
The mushrooms are a great source of protein, B vitamins (especially niacin),
vitamin D, protein, copper, potassium, zinc and selenium.
They also contain high levels of antioxidants ergothioneine and glutathione and minerals.
The drying process allows the properties of the mushrooms to be preserved they also keep their high flavour and the unique aroma once dryed for a long period of time such us 1-2 years .
Using Porcini or any dried mushrooms in cooking is really quite easy. Simply rehydrate the mushrooms in warm water until they get a bigger shape and you can cook them as you would normally do with fresh mushrooms.
You can either dispose the water used to hydrate the mushrooms or it can be used for all the dishes in any quantity.
They can be stored air-sealed in a cool dry place away from direct sunlight
