High in nutrition and vitamins, tops are a rich source of vitamin C, eaten in salads or soups. Native to northern Africa and the western Mediterranean, the ancient Greeks only used the leaves. Beets can be steamed with other vegetables or grated raw as well as boiled and pickled for salads. Best results in soil with a pH greater than 6 and if kept constantly moist. Can be sown indoors and transplanted. Thin to 30-50mm, young thinning can be transplanted older thinning as a leaf vegetable, sown after winter. Roots are stored well after harvest. Sow spring through fall, any time in temperate climates. 50-90 grains per gram
