Arugula is used mainly in salads, but it is also an ideal ingredient for hot pasta dishes, rice, etc. In Italy it is typical to add it to pizzas, once they have been baked, as well as "rocket pesto" -a variant sauce of the popular pesto sauce-. The ruqueta is used more as an ingredient in raw meat preparations such as carpaccios. Like almost all garden plants, it can be sown very well in a seedbed with a good soil to sow in a sheltered place, then when it has two or three pairs of leaves it can be transplanted to its final place, which must be sunny.
